Empanadillas
Ingredients:
Filo dough wafers (ready-made pie-shell forms) for dumplings, or make your own dough as shown below using:
1/2 tsp. Baking Powder
2 egg yolks
A pinch of salt
How to make dumplings dough:
Prepare the dough by adding flour, melted butter, baking powder, water and a little oil mixed together well. With a roller, spread dough and form circles using a pastry mold or a large glass.
Each circle will become a dumpling. The leftovers are re-kneaded, the dough is re-stretched with a roller, and more circles are cut.
Fillings
Spinach, Pine Nuts & Raisins Filling
Rinse spinach well, cook in a little water for a couple of minutes, then drain, and finely chop.
In a skillet, fry pine nuts and raisins (previously scalded in hot water). Mix in the chopped spinach, two egg yolks, and milk, simmering everything on a low heat until blended.
Fill each pastry-dumpling circle with a couple spoonfuls of filling, then fold in half, and seal the edges using a fork. Fry in plenty of oil and drain well. Serve hot.
Tuna, Hard Boiled Eggs & Olives in Tomato Sauce Filling
Mix tuna fish, chopped boiled egg and olives with tomato sauce.

Mix tuna fish, chopped boiled egg and olives with tomato sauce.
Minced Meat & Tomato Sauce Filling
Spice the minced meat with black pepper, and mix with finely chopped garlic, onions, and peppers. Put into a skillet with a little oil, and fry the minced meat. Once it is cooked, add some tomato sauce, mixing it all together, allowing flavors to blend.
Bacon and Cream Cheese Filling
Cook the bacon until it is crispy and then, chop it finely. Add it your favorite cream cheese, blending thoroughly.
Roquefort or Blue Cheese & Ham
Cut ham slices into little bits, and place into a microwaveable bowl, with your choice of crumbled Roquefort or Blue Cheeses. Microwave on high, just until the cheese is melted.
Apples & Cinnamon (Sweet) Filling
Peel and cut apples into little cubes and cook in a saucepan on medium heat, with either cinnamon powder, or half a cinnamon stick. Add the juice of 1 lemon and then cook until apples are soft.
Once cooked, blend it in the mixer, or a food processor. Taste first, because you may need to add a little sugar to sweeten, before filling the dumplings.
