Patatas Bravas  (Spicy Hot Potatoes)



Tomato sauce or ketchup

Tabasco, Chili sauce, or Cayenne powder

Chop the potatoes into cubes and fry them in abundant olive oil. Once they are cooked, drain the oil well and spread Salsa Brava (see recipe below) over them.

(Potatoes with garlic mayonnaise)


Garlic mayonnaise  (make your own homemade mayonnaise as explained below)

Wash the potatoes with the skin, put them in a saucepan with water and salt and let them boil for half an hour. You can also microwave, if you prefer.

Once cooked, allow them to cool, and then peel. Chop into cubes, arrange on a plate, and pour Garlic Mayonnaise over them.

Homemade Garlic Mayonnaise

6 garlic cloves
1/4 l. extra virgin olive oil
1 egg yolk (optional) 

Peel the garlic cloves and put them in the mortar. Add a pinch of salt and grind until they become an uniform mass. Then put the oil in a cruet and start adding it to the mortar, almost drop by drop, while spinning (always in the same direction). It is not necessary to add an egg yolk but you can if you wish.

The dough will be getting more and more consistent when the oil is finished. This sauce can be spoiled, such as mayonnaise, but you can fix it if you take other mortar and changing it to this second very slowly, circling with the pestle and always in the same direction.
Pour refrigerated garlic mayonnaise sauce over warm potatoes, and sprinkle parsley on top before serving.

Homemade Mayonnaise

1 egg yolk
1/4 l. extra virgin olive oil
1/2 lemon

Pour the egg yolk in a mortar with a pinch of salt. Put oil in a cruet and add it very slowly while spinning with the pestle, always in the same direction. The mass will grow and thicken. Add the juice of half lemon little by little.  

Salsa Brava

Mix tomato sauce or Ketchup with the spicy hot sauce of your choice (Tabasco, Chili, or Cayenne powder). Pour over the potatoes and serve them up hot.
