The perfect fall treat everyone will enjoy!
(healthy enough for breakfast, lunch, or dessert)
Ingredients
Graham Crackers squares for crust, do not crush them
4 green & tart Granny or Pippin Apples, cored, thinly sliced & peeled (could substitute other types of apples, or pears)
1/4 cup Raisins, Blueberries, or Cranberries
1 Lemon, juiced (could substitute 1/4 cup pineapple juice)
Topping:
1/4 cup Coconut Oil or Butter
1/4 cup Granulated Sugar (could substitute Stevia or other natural sweetener)
1/4 cup Brown Sugar, not packed
1/3 cup Instant Oats
1/3 cup Wheat Flour
1 teaspoon ground Cinnamon
1/2 teaspoon ground Cloves
1/2 teaspoon ground Nutmeg
Directions
For the crust, line the bottom of a baking pan with graham cracker squares, that's it!
By layers, over the graham cracker crust, successively line a deep-dish baking pan with thinly sliced apples as shown. Add raisins or berries, and then drizzle lemon juice evenly over the apple slices.
In a mixing bowl combine all topping ingredients. Using 2 table knives, within the mixing bowl, and pulling in opposite directions, "cut in" butter or coconut oil, until it's in small, cubed pieces (do not smash or blend). This is supposed to be lumpy.
Sprinkle topping over apples as shown above, and then bake in a preheated oven at 350 degrees, for 30 to 45 minutes,or just until crumbly topping turns brown and apples are bubbling.
Remove from heat and allow to cool for at least 15 minutes before serving. For breakfast milk can be poured over it in a bowl, for lunch Cheddar cheese can be melted over the topping, and for dessert add a scoop of vanilla ice cream, or not!
