Campfire Cookin'

Banana-Coconut Fritters

(Gluten-Free & Sugar-Free)


Sliced pineapple & star fruit added, with grated coconut sprinkles.

With-or-without fruit slices and/or coconut sprinkles, you just can't beat these mouth-watering, naturally  sweet and healthy banana-coconut fritters. 
 
 
 
 
Stovetop and campfire friendly, you'll enjoy these hearty tropical fritters.  Add fruit on the side for a nourishing breakfast.  Serves a family of 4.
 
 

It will be lumpy.

Ingredients:
 
(mash & mix in a bowl)
 
 
 
2 large, overripe bananas
 
2 large eggs
 
2 tablespoons grated coconut (unsweetened)
 
2 tablespoons buttermilk powder (or powdered milk)
 
2 teaspoons ground cinnamon
 
2 drops vanilla extract (could also use pineapple, orange, hazelnut, or maple syrup extract, or essential oils)

Notice lumpy texture when poured into fry pan.
 
 
Directions:
 
fry stovetop
 
(or over a campfire)
 
 

 
Cook with 1 teaspoon butter or coconut oil (which doesn't burn as quickly as butter) until the  fritter batter is covered with bubbles, as shown.
 
 
Before flipping, take the pan off the flame, and work around the edges with a spatula.  Flip the pancake over, from the middle, and allow it to cook on the hot pan (no flame) for about another minute. 
 
Then turn it onto a plate, ready to serve with added fruits, nuts, coconut sprinkles - or not!
 
 
Enjoy them topped, however you like!
