Brunch Strata

Pepper-Cheese & Chorizo Egg Strata



Serve your family and holiday guests this delightfully spicy egg strata to warm them up on a cold winter morning!  This dish will serve about 10 - adults plus children.


Ingredients:


1 dozen eggs
3 cups milk 
10 slices of bread, cut into 1" cubes
1 cup Pepper Jack cheese, cut into 1" cubes
1 cup Cheddar or Colby cheese, cut into 1" cubes
1 sweet red pepper, cut into strips (or tomato slices)
1 cup precooked Chorizo sausage (red & spicy chili-seasoned sausage) or precooked ham or bacon pieces
1 cup spinach leafs or broccoli, chopped
Salt to taste 
  Directions: 

  
Precook Chorizo sausage in a stove-top pan for approximately 10 to 15 minutes, and set aside to cool. 

Layer bread cubes, cheese cubes, precooked Chorizo, and spinach or broccoli in a 9" x 11" baking dish as shown here. Arrange either tomatoes or sweet red pepper strips over the top.
    










Whip eggs & milk together in a bowl and pour this mixture over the entire pre-filled baking dish.





Bake in a preheated 350 degree oven for 30 minutes, or longer, until egg is completely cooked in the middle, and checked by inserting a knife.  Once inserted in the center of the dish, make sure no raw egg residue is left on knife. 

Cut into portions as soon as removed from oven.  Serve warm with cold fruit or veggies on the side.
