Roast Chicken with Apple-Bacon Stuffing
Time: 1h 15 min
Difficulty: Easy
Serves: Approximately 4 to 6
Ingredients:
1 whole chicken -or substitute-
2 bacon slices
1 teaspoon of salt
2 tablespoons of olive oil
Instructions:
You might also want to add (optional) chestnuts, walnuts, and raisins.
Instructions:
Remove everything from inside the chicken (no head, neck, wings, organs, or the paper they come wrapped in) while you preheat the oven to 350 degrees for ten minutes.
Peel & core the apples, slicing very thin & stuffing into the empty chicken cavity. Brush the chicken with oil, as well as inside the roasting pan prior to placing the stuffed chicken inside.
Top the chicken with two slices of bacon and sprinkle salt over all. Then bake at 350 degrees for one hour.
Make sure it is thoroughly cooked, by cutting the thigh open with a sharp knife to see if the meat is pink inside. If so, cook a little longer, maybe 15 to 20 minutes more.
Serve with rolls, rice, potatoes, or garden salad, for an affordable, yet traditional Thanksgiving feast or buffet!
