Garlic Shrimps

Ingredients:
½ kg peeled shrimps
3 cloves of garlic
1 cayenne pepper or a couple if you like it very hot

Chopped parsley
A pinch of salt
Peel and chop the garlic in slices. Place into a frying pan with olive oil on the stove, and then add garlic together with the cayenne pepper. Stir the garlic until it becomes light brown but be careful it does not burn.
Once the garlic is cooked, add the shrimps and keep turning them for a few minutes. Cover with a lid and allow them to cook for 5 minutes. Serve in a casserole dish or directly on a plate accompanied by rice.
Marinated Clams
Timescale: 30 minutes

Price level: Medium
2 Kg fresh clams
1 onion
3 cloves of garlic
1 cup of white wine
1 cup of water
Bay-leaf
6 tablespoons olive oil, better if extra virgin
chopped parsley
A teaspoon of salt
A tablespoon of breadcrumbs

Cayenne pepper ( optional)
Wash the clams for a while under the tap with a large colander until all the sand is removed.
Chop the garlic, onion, and parsley into small pieces. Put 6 tablespoons olive oil in a skillet. When the oil is hot, add the onion and garlic. If you want spicy clams, add a couple of cayenne peppers too. Before it begins to brown, add the bread crumbs and clams.
Remove and add the glass of white wine, a glass of water, the Bay leaf, and 1 teaspoon of salt. Bring to a boil over low heat until all the clams have opened. Sprinkle with chopped parsley, and give them another boil, before serving hot.
If a clam remains closed after being cooked, do not open it because it is not edible.
